You regrow each organ intentionally, one at a time

You figure your best bet is to regrow one organ at a time. That way you can really focus on each one. You think you're missing one kidney, your liver, and the lymph nodes on the bottom right of your body. You start with the lymph nodes (they're smaller.) After you've replaced all of those with the amazing power of your mind, you focus on the liver. When that's done, you start on the missing kidney. Partway through the kidney, you feel a pretty nasty pain in your side, right where you just regrew your liver. You get woozy and pass out.

Your autopsy reveals an acorn squash where your liver should have been. Doctors are baffled.
